Stuffed Tomatoes

• 5 large or 6 medium sized tomatoes
• 1 cup cottage cheese (paneer) –mashed roughly
• 1small onion –chopped finely
• 1 small capsicum –chopped finely
• ½ cup boiled green peas
• 1 tbsp raisins (kishmish) and cashew bits mixed
• 1 tbsp tomato ketchup, or to taste
• 1 tbsp chili sauce or to taste
• ¾ tsp salt
• ½ tsp garam masala
• ½ tsp amchoor (dried mango powder) powder
• Coriander leaves
Cut tomatoes into 2 halves. Remove pulp and keep inverted for 3-4 minutes. Mix all other ingredients well. Add sauces according to your taste. Spoon filling into tomato halves & place in a ring on a plate in the microwave. Micro high uncovered for 2-3 minutes or until tomatoes are tender. Allow to stand for 2 minutes. Serve hot garnished with coriander leaves.
Note: Lightly score the tomato skin so as to prevent the tomatoes from splitting
