Shakshuka egg in tomato sauce

Ingredients

  • one medium-sized onion
  • 1 teaspoon of olive oil
  • One medium bell red pepper
  • two cloves of minced garlic
  • 2 tablespoon of tomato paste
  • two big size tomatoes
  • 1 teaspoon of cumin powder
  • one tsp of paprika powder
  • one tsp of chilli powder
  • one tsp of chilli flakes
  • one tablespoon of sugar
  • salt to taste
  • 6 to 7 eggs
  • chopped parsley.

Method

  1. Dice one medium-sized onion.
  2. Heat up a frying pan.
  3. Add 1 teaspoon of olive oil, add the diced onions, cook for five minutes till the onions softens. One medium bell red pepper, dice the same. Add two cloves of minced garlic. Add 2 tablespoon of tomato paste along with two big size tomatoes. Add 1 teaspoon of cumin powder, one tsp of paprika powder, one tsp of chilli powder, one tsp of chilli flakes and one tablespoon of sugar and add salt to taste. Cook all these in the frying pan for 15 minutes on a sim flame. Make some space in the pan for the eggs.
  4. Break 6 to 7 eggs directly over the tomato paste in the frying pan over the flame, cover the pan and let it cook for 12 to 15 minutes or till the eggs are cooked. Add chopped parsley and serve on the plates. Ready to eat. Enjoy
