Method

  1. Slice the oranges into halves. Squeeze out the juice. Separate the peels and remove all the pips. Grind the peels in the mixer so that they are shredded roughly. Add the juice in the mixer and grind it again. Pour into a heavy steel saucepan and add sugar half the quantity of the orange mixture. Cook on slow fire and keep stirring. Froth will rise keep removing and cooking till no more froth rises. Do a plate test, that is, put a quarter teaspoon a steel plate and tilt it. If the mixture does not slip or flow the marmalade is done. Let cool and store in clean dry bottles.
