Gooseberry Fool Pudding

Ingredients

  • 500 grams gooseberries
  • topped and tailed
  • 100ml double cream
  • 100 ml greek yogurt
  • about 115 grams cup icing sugar(can substitute some of it with honey to makethe dessert healthier)
  • mint sprigs.

Method

  1. Place the gooseberries in a heavy saucepan , add 2-3 spoons of water so that they dont burn, cover and cook over a low heat, shaking the pan occasionally, until gooseberries are tender. Tip the gooseberries into a bowl, crush them, then leave to cool completely.
  2. Beat the cream until soft peaks form,add half the hung curd and beat further and then fold in half the crushed gooseberries. Add half the sugar mixture to the mixture to sweeten as per taste. Sweeten the remaining crushed gooseberries.
  3. Layer the cream mixture and the crushed gooseberries in four dessert dishes or tall glasses, then cover and chill. Decorate with mint sprigs and serve.
